Zesty Ground Turkey in Tomato Sauce

Ingredients
  

Spices

  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chilli powder
  • ½ teaspoon ground coriander
  • ¼ teaspoon ground cinnamon

Other Ingredients

  • 1 lb ground turkey
  • 2 tablespoons olive oil
  • sea salt and ground black pepper to taste
  • spice blend see above,
  • 1 1/2 cup diced shallot
  • 2- inch 1 piece fresh ginger about 1" long peeled and minced
  • 3 cloves garlic peeled and minced
  • 1 cup crushed tomatoes from a can!
  • 1 cup coconut milk Full fat makes a richer sauce. Reduced fat makes an acceptable sauce with lower calories.
  • 3 cups vegetable stock
  • 1 tablespoon lime juice plus extra for serving (optional)

Instructions
 

  • Measure and mix your spices.
  • Saute the shallots in the oil in a frying pan over medium heat, stirring to keep the shallots from burning, about 5.
  • Add the spice blend, ginger and garlic. Continue to stir about a minute. Break up the ground turkey and add to the pan. Stir to brown (it doesn't have to cook all of the way through, that will happen later.)
  • Add the crushed tomatoes, coconut milk, and stock to the pan. Bring to a simmer.
  • Continue cooking at a simmer for a minimum of 12 minutes (to thoroughly cook the turkey).
  • Continue cooking until the liquid thickens. Add the lime juice, if using.
  • Serve over rice or noodles.
