Chicken Soup Using Rotisserie Chicken

This chicken soup recipe made with leftover rotisserie chicken is going to be your go-to soup. It’s quick and easy delicious. After a little chopping and dicing you throw everything into your slow cooker, Voila! Chicken Soup.

I’m Jewish so, in my mind, chicken soup equals love. Someone doesn’t feel well? Take them chicken soup. Gathering the family for Friday night dinner? Chicken soup? Want to show love? Chicken soup. Luckily for me, making chicken soup today is a hundred times easier than it was for my mother. Take a leftover rotisserie chicken (and who doesn’t have leftover rotisserie chicken?) throw it in the slow cooker with chopped vegetables and let it cook.

Instructions:

This might be the easiest dish you’ve ever made.

Ingredients:

3 Carrots
3 celery stalks
1 large onion
1 Tbsp dried sage
2 bay leaves
All of the bones from a rotisserie chicken
As much of the meat from the rotisserie chicken as you would like to invest in your soup
The chicken gel from under the chicken
8 – 10 cups of water

This might be the easiest dish you ever make.

Chop or slice the carrot and celery.
Chop the onions, Want a little richer soup? Saute the onions first, Though not a requirement, sautéing does add a little extra taste

Throw everything in the slow cooker.

Pull the meat off the rotisserie chicken. Remove any skin.

Place ALL of the bones in the slow cooker. The broth is dependent on the bones being cooked with the soup. When I first made this soup I tried a batch without bones. Big mistake! There was NO broth!

If you have gel in the bottom of your rotisserie container, add it to you pot. It’s a wonderful way to enrich your soup.

Add the sage, bay leaves and salt.

Add water.

Turn on your slow cooker and cook for 8 hours. Don’t have 8 hours? If your slow cooker has a faster cook setting, set the slow cooker on the fast cook setting for 4 hours.

Remove the bones from your soup. This is the least fun part of the whole process.

Serve the broth only or add cooked rice or cooked noodles.

  • 1 Slow Cooker

Ingredients
  

  • 3 large carrots
  • 3 stalks celery

  • Bones from rotisserie chicken use them all, the broth depends on the bones.
  • Meat from the rotisserie chicken as much of the chicken as you want to invest in your soup.
  • 1 Tbsp dried sage
  • 2 bay leaves
  • 8 to 10 cups of water
  • Optional: Cooked rice or noodles for serving.

Instructions
 

  • Chop or slice the carrot and celery.
  • Chop the onions, Want a little richer soup? Sauté the onions first.
  • Place everything in the slow cooker.
  • Pull the meat off the rotisserie chicken. Remove any skin. Place in slow cooker.
  • Place ALL of the bones in the slow cooker.
  • Add the sage, bay leaves and salt.
  • Add water.
  • Turn on your slow cooker and cook for 8 hours on low setting or 4 1/2 hours on high setting.
  • When cool, remove the bones from your soup.
  • Serve the soup as it is or add cooked rice or cooked noodles.
