Zesty Ground Turkey in Tomato Sauce

Spices
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon chilli powder
- ½ teaspoon ground coriander
- ¼ teaspoon ground cinnamon
Other Ingredients
- 1 lb ground turkey
- 2 tablespoons olive oil,
- sea salt and ground black pepper, to taste
- spice blend (see above),
- A half cup of diced shallot
- 2-inch piece of fresh ginger, peeled and minced
- 3 cloves garlic, peeled and minced
- 1 cup crushed tomatoes (from a can)
- 1 cup coconut milk (Full fat makes a richer sauce. Reduced fat makes an acceptable sauce with lower calories.)
- 3 cups vegetable stock
- 1 tablespoon lime juice, plus extra for serving (optional)
Instructions:
Measure and mix your spices.
Saute the shallots in the oil in a large, deep, frying pan over medium heat, stirring to make sure the shallots don’t burn. Cook about 5 minutes.
Add the spice blend, ginger and garlic. Continue to stir for a minute. Break up the ground turkey and add to the pan. Stir to brown (it doesn’t have to cook all of the way through, that will happen later.)
Add the crushed tomatoes, coconut milk, and stock to the pan. Bring to a simmer.
Continue cooking at a simmer for a minimum of 12 minutes (this ensures your turkey is cooked).
Continue cooking until the liquid thickens. Add the lime juice, if using.
Serve over rice or noodles.

- 3 cloves garlic peeled and minced
- 1 cup crushed tomatoes from a can!
